Rava Kesari
Ingredients
- Rava (1 cup)
- Sugar (3/4 cup)
- Ghee
- Cashew
- Cardomom
- Raisin
- Water (2.5 cups)
Directions
- Add 4 to 6 teaspoons of ghee to a pan and once it is hot, add cashew to it and fry it till brown. Remove the cashews and keep it aside.
- Add raisin to the hot ghee and fry it till it becomes plump. remove it and set it aside
- Add Rava to the ghee and start roasting it. don’t roast it till it becomes brown. When it is correct, the ghee will separate and the rava will also starts to give out a good aroma. Remove the rava and keep it aside
- Now take 3/4 cup of sugar, 2.5 cups of water, couple of strands of saffron and couple of drops of food coloring. We don’t want one thread consistency. We just want it to start boil. it should be still watery not sticky.
- Now add the roasted rava to the sugar syrup, keep mixing it as you add it so that it doesn’t gets lumpy
- Rava will absorb the water and start to swell. When it is finally done, it will start to separate from the pan. turn off the heat and close it with a lid.
- Add the cashews and the raisins to the kesari and keep it closed.
- Add the crushed cardamom powder to the kesari and mix it will.
