Potato Varuval
- Cut the potato into small pieces
- Add oil to a pan. Once the oil is hot, add tempering items mustard and cumin and wait for it to crackle.
- Add the potato pieces and curry leaves.
- Add Red chilli powder, coriander powder, turmeric, salt. Mix it all so that the spices cover the potato while it is cooked by the oil.
- Add some water to avoid any burning at the bottom.
- Now add more chilli powder, coriander powder, garam masala and some more water. The goal is that spice mix covers the potato.
- Cover the pan and let it cook in low flame (till all water evaporates).
- Preheat the oven to 350 degF and leave the entire pan inside the oven.
- Wait for it to finish cooking in the oven.
