Coconut Rice

Ingredients

  1. Rice
  2. Mustard
  3. Urad dhal
  4. Chana dhal
  5. Cashews(optional)
  6. Red Chillis
  7. Green chillis
  8. Curry Leaves
  9. Asafoetida
  10. Coconut

Directions

  1. Cook rice first and keep it separate
  2. Soak 1/2 tbsp urad dal and 1/2 tbsp chana dal in hot water for 30 mins. after soaking drain water and keep it separate
  3. Add oil to the pan and sputter the mustard seeds
  4. Add the chana dal and the urad dal and stir till it turns brown.
  5. If you have cashews add it and roast it.
  6. Add 1 or 2 red chillis, some curry leaves, couple of chopped green chillis and asafoetida
  7. Now add the grated coconut to the mix and keep stirring.
  8. Saute the mix till the coconut turns golden brown.
  9. Add the above mix to the cooked rice and add salt for taste
