Coconut Rice
Ingredients
- Rice
- Mustard
- Urad dhal
- Chana dhal
- Cashews(optional)
- Red Chillis
- Green chillis
- Curry Leaves
- Asafoetida
- Coconut
Directions
- Cook rice first and keep it separate
- Soak 1/2 tbsp urad dal and 1/2 tbsp chana dal in hot water for 30 mins. after soaking drain water and keep it separate
- Add oil to the pan and sputter the mustard seeds
- Add the chana dal and the urad dal and stir till it turns brown.
- If you have cashews add it and roast it.
- Add 1 or 2 red chillis, some curry leaves, couple of chopped green chillis and asafoetida
- Now add the grated coconut to the mix and keep stirring.
- Saute the mix till the coconut turns golden brown.
- Add the above mix to the cooked rice and add salt for taste
