Add oil to the pot in saute mode and when hot add mustard, red chilli, cumin and curry leaves. Once mustard starts to sputter add cut onion and fry it till the onion becomes transparent.
Add tomato to the onion and saute till the tomato becomes mushy.
Add ginger garlic, sambhar powder mix and salt to the pot.
Add the washed moong dhal and the spinach to the pot.
Cover the pot with the lid, turn off saute mode, and pressure cook for 8 minutes.
Once the pressure cook is done, let the pressure off quickly. Open the lid and set the mode to saute.
Add enough water for the required consistency.
Now add tamarind paste to the pot and let it come to boil.
