Puliyodharai (Tamarind Rice)

Steps to make tamarind rice

  1. Cook rice separately in a rice cooker
  2. Make Spice Powder
  3. Make Seasoning and tamarind paste
  4. Finally mix all the items made earlier into tasty puliyodharai

Ingredients for spice powder

  • Sesame seeds(Ellu)
  • Fenugreek(Vendhayam)
  • Red Chilli(just 1 or 2)
  • Coriander seeds(if you don’t have it, no problem use coriander powder instead)

Ingredients for the seasoning and tamarind paste

  1. Channa Dhal(Kadalai Paruppu)
  2. Asafoetida
  3. Salt
  4. Turmeric
  5. Roasted Peanuts(if you are going all in)
  6. Red Chilli
  7. Mustard
  8. Urad Dhal
  9. Curry Leaves
  10. Tamarind Paste(add some tamarind paste to a cup of water and dilute it)

Prepare the spice powder

  1. First dry fry sesame seeds, fenugreek and 1 red chilli (the red chilli here is the main component for the spice, so if you want your food to be hot add more red chilli here)
  2. if you have coriander seeds add to the above and dry fry, otherwise you can add the coriander powder later
  3. Grind the above fried mix into a coarse powder and keep it separetely

Prepare the tamarind paste

  1. Add Oil in a frying pan.
  2. add the mustard, urad dhal, channa dhal, red chillis, curry leaves and fry all till the channa dhal turns brown
  3. Pour the diluted tamarind juice into the pan.
  4. add the turmeric powder
  5. If you are using coriander powder add it to the mix here
  6. Add salt to taste and a pinch of asafoetida
  7. Keep cooking and the mix will start to boil and wait till oil separates.

Prepare the food

  1. Spread the cooked rice in a wide container
  2. Add the tamarind paste from the seasoning step
  3. Add the spice mix powder
  4. Mix them thoroughly
