Potato Varuval

  • Cut the potato into small pieces
  • Add oil to a pan. Once the oil is hot, add tempering items mustard and cumin and wait for it to crackle.
  • Add the potato pieces and curry leaves.
  • Add Red chilli powder, coriander powder, turmeric, salt. Mix it all so that the spices cover the potato while it is cooked by the oil.
  • Add some water to avoid any burning at the bottom.
  • Now add more chilli powder, coriander powder, garam masala and some more water. The goal is that spice mix covers the potato.
  • Cover the pan and let it cook in low flame (till all water evaporates).
  • Preheat the oven to 350 degF and leave the entire pan inside the oven.
  • Wait for it to finish cooking in the oven.
