Kadai Chicken

Ingredients for kadai masala
Red chilli, coriander, black pepper, fennel and cumin seeds. Dry fry and then grind to a coarse powder
Ingredients for marinate
- Chicken
- Red Chilli Powder
- Salt
- Ginger Garlic Paste
Ingredients for cooking
- Ghee/Butter
- Fresh Garlic
- Fresh Ginger
- Turmeric
- Coriander Powder
- Cumin Powder
- Red chilli Powder
- Black Pepper Powder
- Tomatoes
- Curd
- Fresh Cream
- Capsicum
- Green Chilli
- Onion
Cooking Instructions
- Onion, capsicum and greenchilli are added at the end of the cooking and mostly it will be uncooked when eaten. i.e., cook all the other ingredients and then right before you are done cooking add some onions, capsicum, green chillis and cilantro to the final dish.
- First cut the chicken into small pieces. Bone in chicken will be nice as it will be better than the boneless for this recipe.
Marinate the cut chicken with Chilli Powder, Salt, Ginger garlic paste.
Add some ghee/butter and oil(as i don’t want to fry the chicken in the ghee alone) to the pan. once it is hot, add the chicken pieces and fry in the open and then close the lid and let it cook for some more time.
Now add the following ingredients
Crushed Garlic, pieces of Ginger, turmeric, coriander powder, cumin powder, red chilli powder, black pepper powder and kadai masala powder
Add chopped tomatoes and cook till the tomatoes turn mushy. add water and close the lid and keep cooking for some time.
Add curd to the pan and keep cooking.
Add fresh cream to the pan and keep cooking
Add garam masala to the pan and keep cooking
Add capsicum, onion and green chilli to the pan and keep cooking
