Carrot Stir Fry (Poriyal)

Directions

Prepare the carrots

  1. First cut the carrots into small pieces.
  2. Wash the carrot along with moong dhal.
  3. Now add just enough water to boil carrots and moong dhal and cook them in the pressure cooker.

Prepare the poriyal

  1. Heat oil in a kadai and add in the mustard seeds, cumin seeds, dried red chilli and curry leaves.
  2. Add one medium finely chopped onion to the kadai and fry it till soft.
  3. For extra spicy add a couple of chopped green chilli to the onion.
  4. Add salt and generous amount of asafoetida.
  5. Now add the cooked carrots and dhal to the kadai.
  6. If you have shredded coconut add it now.
  7. Briefly saute the entire content for some time and take it off the heat.
