Carrot Stir Fry (Poriyal)
Directions
Prepare the carrots
- First cut the carrots into small pieces.
- Wash the carrot along with moong dhal.
- Now add just enough water to boil carrots and moong dhal and cook them in the pressure cooker.
Prepare the poriyal
- Heat oil in a kadai and add in the mustard seeds, cumin seeds, dried red chilli and curry leaves.
- Add one medium finely chopped onion to the kadai and fry it till soft.
- For extra spicy add a couple of chopped green chilli to the onion.
- Add salt and generous amount of asafoetida.
- Now add the cooked carrots and dhal to the kadai.
- If you have shredded coconut add it now.
- Briefly saute the entire content for some time and take it off the heat.
