Ennai Kathirikkai (Brinjal or Egg Plant Gravy)

Ingredients

  1. Brinjal
  2. mustard,fengreek seeds, hing and curry leaves for seasoning
  3. tamarind paste

Ingredients for Roast and Grind

  1. kadalai paruppu(chana dhal) – 2 tsp
  2. Coriandar seeds (im using powder) – 3 tsp
  3. Urad dal – 2 tsp
  4. Red chillies (amount based on how spicy you want)
  5. Grated coconut – a small amount

Seasoning ingredients

  1. mustard seeds
  2. Hing
  3. fenugreek seeds
  4. Curry leaves

Directions

  1. Heat oil in a kadai and fry the ingredients mentioned under roast and grind until the dal turns golden brown. add grated coconut and fry for a few more minutes
  2. Grind the above mix to a coarse form
  3. Wash the brinjal and cut to your preference
  4. Heat oil the pan in which you are going to cook the brinjal. add mustard, fenugreek seeds, hing and curry leaves
  5. Add the brinjal, tamarind paste and the ground spice powder and salt as needed
  6. Cook till the brinjal is cooked and the oil collects on top and the gravy turns thick
